Walnut Balls!!! (#12 on our “25 Days of Desserts” List!)

These cookies are kind of similar to Hungarian Cookies. In fact, it’s easy to crank both of these cookies out in the same day (You may as well make the powdered sugar mess ONCE versus TWICE!)! Dave LOVES these cookies because he loves SHORTBREAD….and these cookies kind of taste like that! They are BUTTERY and FLAKEY and TENDER cookies with CRUNCHY CHOPPED WALNUTS throughout. Plus, they’re rolled in POWDERED SUGAR, so they SATISFY your sweet tooth!!! (Dave can eat a whole batch of these cookies in one sitting!) These TASTY WALNUT BALLS are #12 on our “25 Days of Desserts” list!

 

Yield: 30-35 cookies

 

INGREDIENTS:

1 cup (2 sticks) of salted butter, softened

1/2 cup of sugar

1 tsp of vanilla extract

2 1/4 cups of flour

1/2 cup of finely chopped walnuts (Pulse in your food processor!)

Powdered sugar (for rolling)

 

DIRECTIONS:

1. In a large mixing bowl, cream your butter, sugar, and vanilla extract with a hand mixer on medium-high speed. Add in your flour and walnuts. Stir to blend.

2. Shape your dough into a ball and wrap it in saran wrap. Chill your dough in the refrigerator for at least 1 hour (NOTE: This step is SUPER IMPORTANT!! If you don’t chill your dough, the cookies will spread out and not maintain their “ball” shape! Learn from MY mistakes!)

3. Preheat your oven to 350 degrees F. Line two (2) cookie sheets with parchment paper or silpat.

4. Once your dough has chilled, use a small cookie scoop to measure out bulging scoops of dough. Roll your cookie dough into balls and place them on your baking sheet, about an inch apart.

5. Bake your cookies for 20-25 minutes, or until the edges begin to “brown.” Let your cookies cool for 5-7 minutes on the baking sheets; then, carefully transfer them onto a wire rack to cool completely.

6. Once COMPLETELY COOLED, roll your cookies in powdered sugar!

These cookies are DANGEROUSLY GOOD!!!! And they make any HOLIDAY COOKIE PLATTER look SUPER FESTIVE!!!
